We’re back

Starting last night we went ahead with our regular A la carte menu and minus the buffet for dinner. The response was quite good for a thursday night. The best thursday night so far in terms of revenue. Four youngsters couple of them partimers doing their nursing in bangalore have been helping us out with the service in the evenings. Got two more young lads as apprentice trainees.

The boys did a commendable job last night…we are even looking at having a buffet and an ala catre menu for the week end….

This will also pass…I keep hearing this so oft that i keep telling myself the same when I am going through a bad time… Last week was quite tough ( putting it mildly) but I think we came out faring reasonably well… except maybe for two / three constructive criticisms we received over the last 10 days.

Ok not three but two…Tandoori chicken full is not 1200gms… we use 800gm birds so that cannot be faulted on us…:)

10 days of Buffets

My last post gave a hint of rampant staff poaching. Been talking to a lot of people and they have all had the same problems at some point. Its tuff to manage without proper staffing and when they leave without any notice its a set back getting things done the way it should be.

To tackle this situation we have been having Buffet Lunches and Dinners for the past 10 days. We have also been operating the tandoor.

Hopefully this labour issue would be sorted out soon and we would get back very shortly to serving our ala carte menu for Lunch and Dinner.

I am travelling these past and next few days and hence the menu updates may be slightly irregular.

A tough one week

Last week was tough, operationally. Got a first hand feel of rampant staff paoching in Bangalore…way too many restaurants way too many offers for the staff working to decide to jump at the smallest hint of a visible carrot.

Lost 4 staff to this menace last Monday. Dalfryday operations didnt suffer much as we hadplanned for back ups for any such eventuality.

We didnt want to compromise on our service standards so had opted for a week of tempting buffets.

I have been very busy the last week to even make entries on the buffets menu the whole of last week… We have settled down now. Ffull service with our A la carte Menu will begin in a couple of days.

We plan to offer home deliveries by the 15th of November. We have been regretting party and outdoor catering offers for some time now…Once deliveries begin we shall also be taking up these offers.

“Its all part of the learning curve” said a diner last week, small setbacks and we are glad these setbacks have come on early and we have been able to handle them reasonably well… Tough choices…great lessons and wiser by the day….

Hey! and we didnt have any credit card server bungle this last week end… which was cool!
